Coconut oil... made .... Naturally.

Our coconut oil is made right here on our grounds. The oil, not rushed, but is produced when the coconut meat is allowed patiently to "age" until the oil is concentrated and is ripe. The basic steps for how our coconut is made is outlined below.

Coconuts are allowed to dry and fall naturally on the ground.

Coconuts at Estate Mary's Fancy are harvested naturally. How? They are collected when they fall from the trees. They are then gathered and placed to dry by the sun, allowing the coconut meat within the husk to dry out naturally. Timing is important to prevent them from sprouting leaves on their way to become coconut trees.

Coconuts who begin to sprout are gathered and donated to nonprofits and environment areas to plant as part of an efforts to help with the retaining of soil to prevent soil erosion.

The coconut meat is removed from the shell and shredded. The coconut meat is then squeezed to extract the oil out of the coconut milk. Depending on what kind of oil is being made, it will either extracted from the the above mentioned method or placed on a slow fire while the oil will rise to the surfact and skimmed off. '
